“I have a friend who hosts a Christmas Eve party every year, and she would always ask me to make the greens for it,” Harris recounted. “I’m not kidding when I say that I made so many greens, I had to wash them in the bathtub. “I start by slicing up my garlic, but first, I chop up some bacon and get all that fat going. Then I add the garlic, some chili peppers, and a lot of water with a little chicken stock. I let it cook for a while before adding the greens. Once the greens are in, I let it simmer for a couple of hours. Then I add vinegar, and as a little cheat, I put in some Tabasco,” she explained.
“That’s my secret to making great greens,” she concluded with a smile.Collard greens are a staple in Southern American cuisine, often associated with the region’s history and culture.
